Easy Peach Cobbler

Here is a super yummy and easy recipe that a friend gave to me,
so I thought I would pass it along....

Easy Peach Cobbler

2 large cans of peaches
1 yellow cake mix
2 sticks of margarine

Pour one can of peaches into a 9x12 baking dish.  Drain the juice from the other can, and
pour those peaches into the pan as well.  You may want to slice the peaches in half.
Then sprinkle the cake mix on top of the peaches.

Slice the margarine and add on top of cake mix.

Bake uncovered at 350 until the cake is a golden brown.  Usually 45 minutes to an hour.
Serve warm with some vanilla ice cream!  Yummy!

Young Author's Day

Today parents were asked to come to school and have their child read a story that they wrote and illustrated.  Grace wrote about an animal, of course.  The book was called "The Rabbit".
She was so excited to sit and read it to me today.
Here is the cover of her book, and a little something about the author.

The children in Miss Grimm's kindergarten class have also been working on a class book about "important things".  Some kids wrote about grass, some kids wrote about the importance of chickens, and others wrote about the importance of brushing your teeth.  Grace decided to write about sunflowers.  She is her Mother's child!  Here is her story and illustration.

I am so proud of Grace.  She has come along way with her reading and writing this year.  After reading to me, she always says, "See Mommy, I really can read.  Just like Sissy"  She enjoys school and can't wait to start first grade.  I on the other hand, would like things to be in slow motion.  My girls are growing up too fast, and it really does seem like they were born yesterday.

Strawberry Walnut Salad

Each week I will try to post a new recipe to share.  Tonight I made a beautiful salad to go with our grilled mini hamburger sliders, grilled corn on the cob and pineapple.  This is a very simple and easy recipe.  Hope you enjoy this salad.

Strawberry Walnut Salad
Red Leaf or Romaine Lettuce
Strawberries
Sugar
Margarine
Chopped Walnuts
Mayonnaise
White Vinegar
Milk
Feta Cheese
Blue Cheese

Shred the lettuce

Slice Strawberries (1cup)

Walnuts:
In a non-stick pan, melt 1/2 cup white sugar and 4 tablespoons of butter.  Add in 1 cup of chopped walnuts and cook for 10 minutes.  Make sure that the nuts are well coated.  Put the cooked walnuts on wax paper to cool.  Once they are cool, simply break apart.

Dressing:
1 cup of mayonnaise
4 tablespoons of white vinegar
2/3 cup sugar
1/2 cup milk
Whisk all together, then chill

Lastly, add the sliced strawberries, a handful of both feta and blue cheeses, walnuts, and toss.  Then you can drizzle the dressing on top and serve.

Enjoy

A Beautiful Sunday in May

Jason took the girls fishing on this beautiful Sunday morning.  Maddy did catch a few
little ones, but it was Daddy who got the big one.

Here are just a few photos of the girls while they were fishing.  To be honest, Grace got bored and started picking flowers.  Her attention span is very short.  She says fishing is to much work.

Later that afternoon we decided to check out Adriatica in McKinney Texas.  Simply beautiful.  They are still under construction, however they have beautiful places to take pictures, so that's what we did.

Meet the Family

Jason and I met in 1994 in Dallas Texas.  We worked together at a software company and became great friends.  Our first date was magical.  He took me to a great Italian restaurant, where they played beautiful music at our table.  He was such a gentleman.  Bought me flowers, held my hand,  opened my car door, just treated my like a real lady.  I said to myself, "Someday I'm gonna marry that man"  And sure enough I did.  This November will be 15 years.  The good ones are few and far between.  I was the lucky one.
Our oldest daughter Madison has a hold around my soul.  I call her my "pride".  I am always so proud in everything that she does.  She is a beautiful young lady with long blonde hair and blue eyes.  Absolutley stunning.  She is a kind hearted child who is such a people pleaser.  Her heart is as big as Texas.  She would say that pink is not her favorite color.  That hairbows and perfume really aren't that important.   Her passion is playing soccer.  Although she can be shy, when she plays soccer another personality shines though.  School comes easy for her so far, and for that I am greatful.  Academics were never my stong point.  She hopes to attend the University of Texas someday.  I suppose I better start looking for a job.

Our and youngest daughter is Grace.  Where do I begin?  I call her my "joy".  This child was my miracle baby.  She was born 7 weeks early and stayed 2 weeks in the NICU.  The doctors came in and let me know that due to her being born so early, that she would likely be slow, and behind on things.  Well, those who know little Grace, slow does not fit in her vocabulary.  She is a beautiful little girl with dark brown curly hair and chocolate pie eyes.  Dimples you could plant trees in. Her smile can light up a room.  Everyday she makes me laugh.  Not afraid to get dirty, yet still appreciates dressing up and playing in Mommy's makeup.  She doesn't miss a thing.  Always busy.  Her passion is dancing!  Loves, loves music.  I'm convinced that someday she will be some kind of performer.

Put all this together, and we are the Reynolds family.  Just ordinary people with ordinary lives, and blessed with what the Lord has given us.
